Egg Curry

Ing: 6 hard boiled eggs; 1 tsp cummin seeds, 5 red chillies; 1 big onion,3 cloves garlic, atsp mustard seeds, 1/2 tea cup coconut milk.


Method: Grind the onion,garlic, mustard seeds, cummin seeds and chillies. Fry this paste in little ghee. Add the eggs Let it cook slow for few mins. Then add the coconut milk and salt to taste and remove from stove. let the gravy thicken. when ready add a tsp of lime juice and serve.

Steamed Bread Rolls

Ing:
Potatoes-2 cups (small pieces),
green peas-1/2 cup,
green chillies-3-4,
salt-to taste,
garam masala-1/2 tsp,
lime juice-1/2tsp,
coriander leaves -1bunch (big),
sugar -1/2tsp,
oil -to fry,
bread.

Method:
Cut the potatoes into small pieces and boil it with green peas, green chillies and just enough water to cover it. Add salt, when nearly cooked add masala pwd. ( garam masala lime juice, coriander leaves chopped and sugar) allow it to cool.

Steam the bread slices just for 2 mins. in idli vessel or pressure cooker. Then with a rolling pin flatten the bread slices place a spoonful of potatoes mixture in the middle of the bread slices. Press the ends with maida paste and deep fry the bread puffs serve it with tomatoe sauce.

Crispy Fried Fish

Ing: 2pomfrets cleaned, sliced. 2tsp. chilli powder, 1tsp garlic paste. 1/2tsp turmeric pwd, 1tsp coriander leaves ground. 1 cup rice flour. oil for frying, lemon slices, salt to taste.

Method: wash fish slices. Discard heads, tails and innards. Marinate the slices with all the above ingredients except flour and oil. Rub in the masala and leave for 30 minutes. Add a little salt to the flour. Heat one cup oil in a griddle or non-stick pan and fry a few pieces at a time, rolling them in the flour before doing so. Serve hot with slices of lemon.
